Keto Bread Recipe | The Classic Psyllium Loaf

  1. Preheat the oven to 350°F (175°C) with the rack in the LOWER position. Line a baking sheet with parchment.
  2. Whisk the almond flour, psyllium powder, baking powder, and salt together thoroughly in a large bowl. Set 1 cup of water to boil.
  3. Add the vinegar and egg whites to the dry mix and combine well.
  4. Pour in the boiling water while beating with a hand mixer for about 30 seconds — and then STOP. The boiling water shocks the psyllium into an instant, elastic gel (that's your gluten substitute), and the dough should firm up to a Play-Doh consistency. Overmixing is how you get a gummy, collapsed crumb.
  5. Moisten or lightly oil your hands and shape the dough into 6 rolls. Top with sesame seeds if using.
  6. Bake on the lower rack for 50–60 minutes. The rolls are done when the bottom sounds HOLLOW when tapped — they will look done on the outside long before the inside is, so trust the tap test (or an instant-read thermometer: 205–210°F in the center), not the color.
  7. Cool completely on a wire rack — at least 1 hour — before cutting. Slicing warm psyllium bread guarantees a gummy, wet crumb. Patience pays.

Notes

  • Purple or grey bread? Some psyllium brands tint the crumb during baking. It's completely harmless and doesn't affect taste — switch to a 'blonde' psyllium brand if the look bothers you.
  • Gummy inside? It was underbaked or cut too early — bake the full time, confirm the hollow tap, and cool completely.
  • Only have whole husks? Grind them to a powder in a coffee grinder and use the same 50 g.
  • Store in a paper bag (plastic traps moisture and sogs the crust) for 2–3 days, or slice, freeze, and re-toast.

The Three Rules of Psyllium Bread

Follow the recipe card below and you'll nail it — but these three rules are where every failed loaf comes from, so burn them in:

  1. The water must be BOILING. Truly boiling — not hot tap water. The thermal shock is what activates the psyllium gel that makes the dough elastic and drives the rise. Lukewarm water = flat, dense pucks.
  2. Trust the tap, not the look. Psyllium bread looks finished on the outside way before the inside is done. Tap the bottom of a roll — a hollow sound means done. If you have an instant-read thermometer, 205–210°F in the center is the gold standard.
  3. Cool completely before slicing. The crumb finishes setting as it cools. Cut it warm and you'll swear the recipe failed — an hour on a wire rack and it's perfect.

Why Egg Whites Only?

The whites bring protein structure for the rise without the heavy, spongy, eggy flavor that yolks cause in keto bakes. Save the yolks for your morning scramble.

Make It Your Own

  • Sandwich loaf: press the dough into a small (7×3.5 in) loaf pan instead of shaping rolls, and extend the bake to 60–75 minutes.
  • Burger buns: flatten the 6 rolls slightly before baking — they hold up to a juicy burger better than any lettuce wrap.
  • Toast it. Day-two rolls sliced and toasted with butter are arguably better than fresh.
