Keto Tortillas Recipe | Flexible, Foldable, 2 Net Carbs

  1. Whisk the almond flour, psyllium powder, salt, and baking powder together until uniform with no lumps.
  2. Add the olive oil and warm water and stir until it comes together. The dough looks wet and sticky at first — give the psyllium 1–2 minutes to absorb the water and firm up. If it's still dry and crumbly after that, add water a teaspoon at a time until you have a soft, pliable ball.
  3. Knead by hand 30–60 seconds until smooth, then cover and REST 10 minutes so the psyllium fully hydrates — this rest is what makes them flexible. (Sticky dough or a hot kitchen? Chill it 15–30 minutes instead.)
  4. Divide into 6 equal balls (about 65–70 g each). Keep the waiting balls covered with a damp towel so they don't dry out.
  5. Roll each ball between TWO sheets of parchment paper to 1/16 inch thick (1.5–2 mm) and 6–7 inches across. Thin is the whole game — thick tortillas crack when folded. For perfect circles, trim around an upside-down bowl and re-roll the scraps.
  6. Heat a nonstick or well-seasoned cast-iron skillet over medium to medium-high until fully hot, and wipe it with a barely-oiled paper towel — this is essentially a dry-fry.
  7. Peel off the top parchment, flip the tortilla into the pan, and peel away the second sheet. Cook 1–2 minutes until brown spots form and bubbles appear, flip, and cook 30–60 seconds more. Pull it while the center is still soft — dark, crisped edges mean it will crack.
  8. Stack the finished tortillas under a clean kitchen towel to stay warm and pliable while you cook the rest. Serve warm — rewarm 10–15 seconds per side in a dry pan before folding if they've cooled.

Notes

  • Warm tortillas fold; cold tortillas crack. Always rewarm before rolling a wrap or taco.
  • Cracking when folded? Rolled too thick — 1/16 inch, between parchment, every time.
  • Purple or grey tint? A harmless psyllium-brand pigment reaction. Taste and flexibility are unaffected.
  • Storage: cool completely, layer with parchment in an airtight container — 4–5 days in the fridge, 1–3 months frozen. Torn ones make great chips: brush with oil and bake at 350°F until crisp.

Taco night was one of the hardest things to give up on keto — until this recipe. These tortillas actually fold. They roll around a burrito, bend around a taco, and hold a wrap together, all at about 2–3 net carbs each, with no gluten and no eggs.

The secret (you guessed it) is psyllium husk. Its gel gives the dough the stretch that gluten normally provides — it's the difference between a tortilla that wraps and one that shatters. The Two Secrets to Tortillas That Don't Crack

  1. Roll them THIN. One-sixteenth of an inch, between two sheets of parchment (the dough sticks to everything else). Thickness is the number-one cause of cracking — a thick tortilla is just a sad cracker waiting to happen.
  2. Serve them WARM. Psyllium tortillas are flexible when warm and brittle when cold. Ten seconds a side in a dry pan brings a fridge-cold tortilla right back to life.

A Few Pro Moves

  • Use superfine blanched almond flour. Coarse almond meal makes gritty tortillas that tear along the fold.
  • Don't skip the rest. Those 10 minutes are when the psyllium finishes hydrating — rushing it gives you crumbly dough that tears on the rolling pin.
  • Medium heat, light hand. The pan should be fully hot before the first tortilla (a faint sizzle on contact), but pull each one while the center is still soft. Browned spots: yes. Crispy dark edges: too far.
  • Want them sturdier for big burritos? Swap the oil for 1 large egg — a slightly richer wrap that stands up to heavy fillings.

What to Put in Them

Taco beef and cheese, obviously. But also: scrambled eggs and bacon for breakfast tacos, leftover keto breaded chicken with mayo and pickles, or butter and cinnamon "sweetener" for a dessert quesadilla. And if you're on a psyllium baking roll, the classic keto bread is the natural next bake.
