Ingredients

Directions

  1. Grind pork rinds into a powder and then place into a separate bowl.
  2. Cook cauliflower fully. Then, drain out the water with a colander.
  3. Place cooked cauliflower in a food processor or blender, and blend until it becomes a mash.
  4. Add in garlic, pork rind powder, salt, pepper, and Italian seasoning into the food processor with the blended cauliflower, and mix together.
  5. Add blended cauliflower mix to saucepan over medium heat.
  6. Add in butter and Parmesan cheese to melt and continuously fold all ingredients together as the mixture heats.
  7. Heat in pan for a total of 7-12 minutes with a spatula until all ingredients are melted and mixed together. Make sure the pork rinds become soft.

Notes

  • Remove larger, harder pieces of pork rinds while mixing with spatula.
  • Match this with slow cooked pork, steak, or BBQ chicken, and I absolutely love mixing this mash with my selected entree and G Hughes Sugar Free BBQ Sauce!
